I am married with no children, I put that on my work tax forms, but they never take out enough taxes and I end up owing a whole bunch on taxes. Am I supposed to put a dependant or something on there, or am I just doing my taxes wrong, or should I change it to take more taxes out?

Some taxpayers always seem to get small refunds or owe money even if they fill out their W-4's correctly at wok. If you have other income such as interest, dividends or no itemized deductions this may cause that. As far as your withholding goes, even if you are married you can also claim single on your withholding and they will take out more. You can also not claim an exemption for yourself and this will also result in them taking more. So you can claim married zero dependents or single zero dependents.
As far as whether you are doing your taxes wrong, without seeing them there is no way to tell. One option is to have a professional that you have confidence in prepare them and see what happens.
